Hacienda Juan Viñas' sugar mill has been producing sugar since 1925. The mill currently has a capacity to process 1700 metric tons of sugar cane per day. The mill produces raw, light brown and plantation white sugar as well as molasses. Starting in 2002, Hacienda Juan Viñas wll produce certified organic sugar.

Hacienda Juan Viñas has grown over 60 hectares of sugar cane without the use of pesticides or any chemicals for a minimum of 3 years. We use certified organic fertilizer "La Hacienda", which is produced in our own composting facility from organic by-products from the coffee and sugar mills. weed control and harvesting is done by hand.

The entire production process is carried out using natural methods from the delivery of raw materials to the final product. No flocculants, antifoaming agents and/or stabilizing agents are used in the production process.
